I can walk!! I am Healing!
I still have to use crutches for the next week but I can walk and I need to wean my self from the crutches by next Tuesday. WOOOOHOOOOO! I am only slightly excited.

So
dh and I are co-cooking dinner together. We are having the meatloaf I made last week that we never got to while I was laid up, oven baked french fries and roasted mexi-corn.

Roasted
mexi-corn is super easy to make. I just roast frozen corn and chopped sweet peppers and green onion for about 20-25 minutes at 375 degrees until the corn is just starting to brown a bit. I personally like it more browned than less browned but for family happiness I only slightly brown it. I use frozen corn straight from the bag because once I made the mistake of thawing it first and the corn was sort of soggy and it never quite roasted it was more steamed.

Roasted
Mexi-Corn
16 ounce bag of frozen corn
1/2 sweet red pepper, chopped
1 green onion cleaned and chopped
2 tablespoons olive oil

preheat oven to 375
in a bowl toss the corn, red peppers, green onion with the olive oil
pour on to a 11X17 baking sheet and roast for 20-25 minutes or until it is as browned as you like it

If the oven is already in use at a different temperature you can still roast your corn just adjust the cooking time to the cooking temperature. Higher temperature means a shorter cooking time and vice
versa. Enjoy!

In other news blogger has decided that once I change the font on my post and change back to normal it should still be giant sized print. Nice. Oh well.

  6. Congrats on being back into the kitchen again! That corn sounds great- I could have used that the other night with our chipotle pork quesadillas. Next time... Keep up the good work!
