Shut off your lights tonight for Earth Hour at 8:30 PM. This is a global effort to show symbolic solidarity to end global warming. I will be sitting quietly playing scrabble with my husband in the twilight, yes it is still light here, hopefully kicking his bu*$. What will you be doing?
Pineapple cake? Well my friend is having a Luau tonight and I was going to make The Better Than Anything Banana Cake but I am thinking I might change it up and try Pineapple Cake? Or Banana Cake with Pineapple frosting? I am also making up a tropical chicken skewers recipe, we'll see how that goes.
I also joined the Daring Bakers group this month. The March 2009 challenge is hosted by Mary of Beans and Caviar, Melinda of Melbourne Larder and Enza of Io Da Grande. They have chosen Lasagne of Emilia-Romagna from The Splendid Table by Lynne Rossetto Kasper as the challenge. This isn't your normal sauce and cheese stuffed lasagne. Rather it is made with homemade spinach pasta, ragu, and bechemal sauce layers and dusted with parmesan cheese. It was a beautiful day of baking spent mostly by myself quietly cooking and panicking over handmade spinach pasta. Only a slight heart attack there you know. The how and hunh(?) of incorporating 10 ounces chopped spinach and 2 eggs into 3 1/2 cups of flour was just scary to think about. I ended up adding an extra egg and all was good. Other than that followed their recipe to a T. Awesome!
