Frugal Friday-Use your leftovers-Thai Inspired Panini

I hate to waste food. If I am going to pay an arm and a leg for groceries the last thing I want to do is chuck it out. Ditto X2 for homegrown food! I came up with awesome little sandwich last week to use up some leftover pork. The peanut sauce is an awesome little recipe I came up with that uses yogurt as a stretcher so it is low(er) in calories than most peanut sauces I have found. It really makes the sandwich and it is killer drizzled over micro greens (thinning from my greens starts). If you don't have a panini press use your George Foreman Grill it works well here.


Thai Inspired Panini makes 1

leftover pork or chicken
lettuce or greens of your choice
3 tomato slices
sprigs of cilantro
sprigs of basil
peanut sauce to your liking or specific caloric needs-recipe below
2 slices of bread for each sandwich you want to make

on one slice of bread drizzle on a small amount of peanut sauce
layer on lettuce meat tomatoes cilantro and basil
again drizzle on desired amount of peanut sauce
cook in you panini press or george foreman grill for 3-5 minutes until toasted
serve with additional peanut sauce

peanut sauce
2 Tbsp chunky peanut butter
2 Tbsp soy sauce-more to taste
1 garlic clove, minced
1 1/2 tsp of grated fresh ginger
1 drop of fish sauce-optional
sprinkle of red pepper flakes-optional
1/4 cup plain yogurt

put all ingredients in a small jar and shake vigorously
until well mixed
use as much as needed
keeps up to week in the fridge

Really the entire reason to make the sandwich is to eat the peanut sauce, it is so good!



You may have noticed that lately all my pictures are in front of plant starts. The plants are growing well and I really can't wait to get them out of my house. I have over a thousand going...and I have more to plant.

    And I totally hear ya with the starts! Mine are taking over my kitchen! Can't wait to get them in the ground. :)

  4. That view! I had to do a double take to figure out if it was for real. Simply gorgeous! (Maybe I'd spend more time in my kitchen if I had a view like that? Doubtful. But a girl can dream, right?)

  6. How long is your growing season? My husband used raised beds and built a tunnel over it for the winter. Our kale and Chard has been growing really well and is starting to go to seed now, but we have lots of lettuce starts. Good luck with your garden. It's always great to get your food right from the yard when you need it.
