Banana Muffins for breakfast

Somehow the other day I found myself up before children and with free time on my hands. I even ground coffee beans with no small people appearing to pilfer a coffee bean. Hmm what to do?? Spying some bananas on their last legs I decided to put my new Kitchen Aid to work making banana muffins. It was really hard not over mix the muffins but I resisted and soft tender muffins were the perfect way to wake up sleepy head boys. And enjoy with that coffee.

Banana Muffins

1 3/4 flour(you can use up to half whole wheat flour)
3/4 cup sugar
2 teaspoons baking soda
1 teaspoon cinnamon

1/2 cup real butter, melted
3/4 cup of milk
1 Tablespoon of vinegar
2 eggs
2 very ripe almost rotten bananas, mashed

Line your muffin tins with muffin papers, grease them or cut parchment paper to fit the tins, set aside
in the bowl of your mixer or a mixing bowl add the dry ingredients give it a spin with the mixer
pour the butter in a separate mixing bowl
add the vinegar to the milk and let it curdle
meanwhile lightly beat the eggs and add them to the butter
add the bananas and stir well
mix in the milk and vinegar

quickly add the wet ingredients to the dry and mix until they are just combined, do not over mix
or you will get tough muffins
spoon the muffin batter into the tins and bake for 15-20 minutes or until the muffins are lightly brown and cooked through
