Ahhhh sweet summer time desserts. Simple and easy to throw together on days when you want to spend as little time in the kitchen as possible. They were born of a need to use whats fresh right now, a trait that has all but disappeared in American culture.
We want what we want, right now who cares if it's raspberries in December they can fly them in from Brazil because I WANT THEM RIGHT NOW. How sad are we to live lives where we dictate what nature can give us. We want peaches 10 months out of the year well for 9 1/2 months those peaches are bland hard rocks only fully becoming real peaches for a couple weeks. People used to dream of peach season now it's always peach season. And at what cost? Simply flavor, texture, juice and bite; not a big price to pay really for what I want. Right? Sounds like a small simple thought pattern.
Apply that to credit card debt. "I want this couch now. Yes I know I can't afford it but I want it so charge it to my card. Now. 2 years later the couch is not what I want, it's the wrong style color size whatever, I'll need a new one. Lets donate this one and get a new one. What? my card is maxxed. But...I want a new couch. What? I'll have to save my money, the couch will be more special that way? NO! I need the couch! NOW! Crap I guess I'll have to save my money, boy I sure am gonna love that couch now." The couch is hypothetical I don't use credit cards, it's used as an example.
I guess what I am trying to say is summer fruit wouldn't seem so sweet if we didn't have a winter to suffer through. And that can be directly applied to a whole lot of life in my opinion.
Gah, how do I wander so far off track? I guess I'm just sitting here in this old house alone, some cyber geek hacked my husbands website at work and he has been at work for 16 hours now with no end in sight and my mind is free to roam with no one to talk to. Keeps me from inhaling the blueberry buckle that just finished it's photo shoot sitting right next to me. Keeps me nibbling anyway not inhaling.
Blueberry Buckle-oven 350 degrees
1/3 cup flour-can use whole wheat
1/2 cup sugar
1/2 teaspoon ground cinnamon
1 1/2 sticks of butter, softened
3/4 cup of sugar
1 teaspoon vanilla
1/4 teaspoon baking soda
1 1/3 cup flour
1/2 teaspoon salt
3 large eggs
4 cups blueberries
generously grease a 2 quart baking dish
topping-pulse all ingredients together in the bowl of a food processor until crumbs are formed do not over mix
refrigerate to keep cool
cake-in the bowl of a stand mixer cream the butter and sugar
mix in the vanilla
in a small bowl mix the soda, salt and flour
add to the mixing bowl in thirds alternately with the eggs
gently fold in the blue berries
pour the cake in the baking dish
sprinkle the crumbs on the top and bake for 45-50 minutes
I served this for dessert tonight. Dinner was fake and bake pork chops, roasted corn on the cob, steamed fresh broccoli and ice water. And my husband missed it, oh well the OT more than makes up for him missing such a great dinner.
