Today was a dessert kind of day. It rained almost the whole day. We spent it folding paper airplanes, cooking, baking, reading and floating boats in the gigantic puddle in the driveway. I knew I wanted to make something but the what eluded me. Finally late afternoon was here and I had to get my ass in gear. I found some sad granny smiths in the fridge behind the mega tub of Nancy's yogurt and almost took them to the chickens. They weren't bad just a little wrinkled. Being cheap and living on a budget means sometimes you eat the wrinkly apples, covered in sugar, oatmeal and butter of course.
Apple Bars
1 cup flour, can be whole wheat
2/3 cup sugar
1/2 tsp salt
1/2 cup butter
1 cup oatmeal
3 apples, peeled, cored and chopped
in a food processor pulse together the flour, sugar and salt
cut the butter up and drop it in pulse until the mixture is crumbly
add the oatmeal and just pulse to combine
pat half the mixture firmly in a 9x9 pan
sprinkle the chopped apples over the top
crumble the remaining mixture over the top
bake for 25-30 minutes at 350˚, watching the last 5 minutes mine got a bit over done but it was still delicious
cut into bars and eat while watching your trash can sail away in 90 mile an hour winds, or not either way there are still good

ReplyDeleteI always use my wrinkly apples for apple bars or crisp. And I use all my left overs for soup or some other such dish whereby I can fool my teens into thinking they didn't have to finish them off! It's good to be frugal!

oh yummy! We've had a blustery, grey, miserable past 2 weeks and it looks like it's going to continue for the next 2 weeks. Our winds didn't get up to 90MPH, but we had a night of 50MPH that blew down half of my Halloween decorations! (boo)

ReplyDeleteYum! A big storm is said to hit us Monday through Wed. They are even giving out sand bags and I've never heard of sand bags being given out in our area. I guess we are getting the aftermath of the typhoon that just hit Japan.
