Last Day for 'Green' White Elephant Gift Exchange


So here we sit on the cusp of December, the end of fall, winter solstice, the shortest days of the year. A month of celebration, parties, festivals, treats and stress to be sure. Look around take a moment to look at your life in appreciation. You may not be where you want to be but surely there are things to appreciate. I dare you to find them, carry them with you during this holiday season and when you feel this month getting the best of you look at the good things you have, take a deep breath and let some of the demands on your time go. Winter Mandarin Pound Cake

I am so happy to see mandarins in the store! They are so perfectly kid sized that we eat them for snack just about every day. I love that my kids can peel them too. We buy them by the 5 pound bag weekly and run out mid week. I'm always sad to see them go after Christmas.

I have never thought to cook with them but when I saw a recipe for an orange cake I decided to give it a try. Mainly because I didn't have any oranges just mandarins. While not the same as an orange they do have an orange taste. I decided good, bad or ugly it was still a cake and you can't really go wrong with cake can you? I made it for a party celebrating the passing of our charter by the local school board for a new Waldorf inspired charter school in our district. About midway through baking I had a vague feeling of doom thinking the cake might possibly be a failure and that I should have tested it before bringing to a party. Too late! I took and with dread watched as it was cut and eaten. Whew! Thankfully everyone ate the whole piece and seemed to enjoy it.

I brought the rest home and my husband liked it. The 2 teenage boys were non-committal which was weird because are teenage boys not human vacuums? Don't get me wrong they ate it but when questioned they "weren't quite sure about it" which I think was a ruse to get another piece. Probably was in hindsight.

Winter Mandarin Pound Cake
1 1/2 cups butter, at room temperature
1 3/4 cups sugar
4 eggs

grated rind of 1 Mandarin, save the fruit
1 teaspoon almond extract

3 cups sifted flour
1 teaspoon baking soda

1/2 teaspoon salt
1 cup plain yogurt (I LOVE Nancy's yogurt) or sour cream
juice of the mandarin + good orange juice to equal 1/2 cup (like Organic Vally Orange Juice)

Citrus Glaze
1/2 cup good orange juice
2 Tablespoons of sugar
2 Tablespoons lemon juice, I used True Lemon powdered lemon plus water (from BlogHer Food Swag Bag! these little packets are a life saver!)

Grease a bundt pan with butter, try using the wrappers from the softened butter
in the bowl of a stand mixer cream the butter and sugar very well (you can use a regular mixer here)
add the eggs one at a time beating very well after each egg
mix in the mandarin peel and almond extract, beat again
sift the flour and baking soda together, set aside
whisk the salt, yogurt (sour cream) and orange juice together, set aside
add the 1/3 of the dry ingredients to the butter mixture, stir until combined
add 1/2 of the wet ingredients to the mixture, stir until combined
repeat and end with last of the dry ingredients
mix lightly do not over beat!!
immediately scrape into the buttered pan
bake for 45 minutes to an hour
testing after 45 minutes with a bamboo skewer to make it is done (if you poke and it comes out clean it's done)
when it's done remove from the oven and cool for 15-20 minutes
then tip it out on a cooling rack
when cool mix the glaze ingredients in a small sauce pan and bring to a boil
reduce heat and simmer for 5-7 minutes until the glaze is thickened a bit
spoon the hot glaze over the cool cake
let it soak in for 15-20 minutes

The cake is mild with a nice citrusy kick in the glaze. Simple, delicious and seasonal.

Hungarian Mushroom Soup + Re-Gifters Gift Exchange

Again with a vegetarian soup, I know! But it's so good and so easy, I HAD to share this one. We all loved it and practically licked the pot clean. Even our "hater of mushrooms" ate it with gusto, in candlelight, of course. It gets the prestigious trifecta rating in our house. If you try it let me know how you like it.

Also, the gift exchange. Please join. I don't want to exchange a gift with myself because I'll already know what I'm sending myself. And I want this to be a roaring success. And fun. Please? But I'm NOT begging or anything. Details below the very cute pictures of my kids.

Hungarian Mushroom Soup-by Mollie Katzen

2 Tablespoons of butter
2 cups chopped onion
1 1/2 pounds mushrooms, cleaned and sliced
3 teaspoons dried dill weed
1 1/2 teaspoons of salt
2 Tablespoons lemon juice
3 Tablespoons AP flour
2 cups water
1 cup milk
1/2 cup sour cream
dash of pepper

in a dutch oven over medium heat melt the butter
cook the onion in the butter for 5 minutes, stir occasionally
add the mushrooms, dill weed and salt
cover and cook over medium low for 15 minutes
remove the lid and add lemon juice
increase heat to medium and slowly sprinkle in the flour stirring constantly
cook and stir for 5 minutes
add the water slowly and cook for 10 minutes
reduce heat to low and stir in the milk, then whisk in the sour cream
heat through but don't boil
taste and adjust the seasonings
serve right away

I think our local coffee house uses this recipe, it tastes incredibly similar except this doesn't cost 8 dollars for a bowl with a slice of bread. I will definitely be making this again. I served it with biscuits and corn for a quick simple meatless meal.

Wow cooking is so cool+My Green White Elephant Gift Exchange

I can cook! When did that happen? I mean it's been weeks of sickness, travel and recovery. I came home to everyone twittering about finalizing that Tday menu. Honestly I felt like a slacker. Today I called the usual suspects to make sure they were on for turkey. I took our sweet little home grown turkey out of the freezer to thaw. I shopped. I made a menu that is flexible to allow me to ditch things if it gets to be to much. I want to be thankful and relaxed. Which of course means Wednesday I will suffer a massive wave of guilt and try to make up for all my low key plans and totally flip out. Happens every year. Thankfully I'm used to it and I can probably live through it yet again. See there I go finding something to be thankful for.

For a while I have been perusing a Moosewood Cookbook by Mollie Katzen. I love all the simple ways to prepare vegetables. We are trying to eat more vegetarian meals to get away from CAFO (concentrated animal feed operations) raised meat and this cookbook has lots of great ideas. I needed a kick in the pants jump start to get me cooking again and so I dove right into to this book and it's many bookmarked recipes. Today I chose to make a very simple borscht. I had a meeting at 4:30 so I actually prepared it ahead of time and when I came home I simply finished it with one last 15 minute simmer.

This soup is packed full of vegetables, enough so that I was afraid my kids might object. I solved that dilemma by serving dinner in candlelight. Its one of my old tricks of getting kids to eat something they might object to. I don't advocate tricking kids into eating vegetable or trying to hide them but sometimes a mom needs a trick up her sleeve and this one works every time. The candle light is so magical that they don't really worry about what's for dinner. Plus it's dark in the dining room so things that might be objectionable slip right by. Then the next time I serve the same meal I can remind them that they loved it last time. Works like a charm.

Borscht-From Mollie Katzen
1 1/2 cups potatoes, sliced
1 cup sliced beets, I used canned and skipped the initial cooking
4 cups water
2 Tablespoons butter
1 1/2 cups chopped onion
1 1/2 teaspoon salt
1 teaspoon caraway seeds
1 teaspoon of dried dill
1 stalk of celery, chopped
1 carrot chopped
4 cups of shredded cabbage
1 Tablespoon of brown sugar
1 Tablespoon of vinegar
1 cup tomato puree
dash of pepper

in a medium sauce pan bring the 4 cups of water to a boil, reduce heat add potatoes and sliced beets cook for 20 minutes or so
meanwhile in a dutch oven melt the butter over medium heat add the onions, salt and caraway seeds, cook for 8-10 minutes until the onions are translucent
when the the potatoes are done add 2 cups of the cooking water to the onions, add the dill, celery and the carrot, cook for 10 minutes
add the rest of the ingredients including potato and beet water
simmer for 15 minutes
top with sour cream and extra dill

I used canned beets in my version. I simply cooked the potatoes alone, then poured the beet juice in to the soup with the beets and the addition of the rest of the ingredients. I think it turned out fine. I do think though that it would be easier to eat if you pureed a third of the soup or so with an immersion blender.

What no fantastic borscht photos? Nope my crap camera finally died. If anyone has a good suggestion for a decent hardworking SLR camera that won't break the bank let me know, I'm in the market.

FoodBuzz Eat-A-Thon, er Festival

I'm sure that all good and responsible bloggers have already posted a FoodBuzz Eat-a-Thon recap, so now is the perfect time for us slow, lazy or otherwise engaged bloggers to step up and write a post. I was without Internet service after I sobered up and then I was too busy playing to write. Anybody who reads me knows I try to post about 5 times a week, I rarely (NEVER!!) go this long. I feel guilty but I was on vacation. I think my head is screwed on straight now and I am actually ready to write coherently and cook too. Wha???

But first, first a weekend recap. The weekend started Friday at 5 pm with a great rooftop cocktail party right at the end of Mission street under the bay bridge at Hotel Vitale. The first meeting of bunch of people who write instead of talk was made much better by free flowing drinks. I mean seriously I need a couple hours of writing and editing to sound coherent and even then I don't always make sense. Free drinks loosened us all up, made us chatty, able to laugh at each others jokes and likewise make jokes. FoodBuzz you nailed it with free drinks to start us off. What the free drinks were I don't remember I was too happy enjoying them but they were beer and something fancy.

Then we rolled on down to the Ferry Building to a feast of feasts. The BEST street vendors from San Francisco were there to feed us crazy happy food bloggers. RoliRoti rocked everybody with their kickass porchetta sandwiches and roasted potatoes. Fresh organic oysters shucked just for you by Hog Island Oyster Co. Raw vegan 'cheesecake' (ahhhhh dying and going to heaven) by Alive! More beer from Thirsty Bear, SALUD! Lets see there was pizza I missed it, too full. I did not miss the Mission Minis Cupcakes, oh man they were so good Janet and I split 3 or 4 of them. I don't think I ate anymore food, the porchetta was just so good and huge too! I rolled on to the f-line and was back at our very nice and affordable hotel, the Pickwick before I knew it. I hit the hay early because I had an early session the next day.

For some insane reason Janet and I (OK I) decided the 9 AM farm to table discussion would be a great way to start Saturday. It was but dang that was so early. Thankfully Janet was awesome enough to order me an Americano from Blue Bottle coffee. I have never had such a great cup of coffee! We had an amazing morning session with Paul Arnestam from The Hotel Vitale's restaurant Americano and Brian Kenny from Hearst Ranch. The discussion was centered around raising ethical beef and the ability to sell a whole cow rather than just the prime cuts. I enjoyed the small group setting and the discussions points everyone brought up. We headed back to the ferry building to do a bit of strolling. I bought some cheese and bread for our trip to the hostel.

­We freshened up and rested a bit before heading over to the Metreon for a mega tasting event and a wine tasting. So much food. I never thought I would say that in my life but there it is. There was so much food and I swear I did not get to all of it, though I did give it the ol' college try. We were given a wine glass or pilsner glass upon entry and a swag bag then we were set loose. I didn't even know where to look first. We poked around and tried some hot sauce, some cookies and then found the beer(yay!). After a good drink and a look around we decided to really get down to work. We tried: 479 Popcorn, many many Foodzie treats(most notably “My husbands Nuts” and Lavender Shortbread), Kerrygold cheeses (my favorite being Dubliner but it already was, so so so good) and butter, Recchiuti chocolates and chocolate covered hazelnuts, More Mission Minis (can you ever get enough?) and Frog Hollow Farms. Again I want to say the stand out beers were by Magnolia while others were grooving on the chocolate and watermelon beer. I am more of beer purist, I want my beer to taste like beer not fruity but everyone else seemed to love the flavored beer. At some point we realized our sparkling wine tasting was about to happen so off we went to drink a bit more. While there the moderator asked who traveled the farthest and Janet started waving my arm around and I wanted to climb under the table, I like attention but on my own terms, everyone turned to stare and all I could do was blush and mutter about being from Alaska. Still a dork some things never change!

During the wine tasting we had 4 glasses of wine, I seriously KNOW my limitations and while others had no problem knocking back all 4 glasses of wine I sipped each one and really tried to taste them. Since I don't LIKE wine it was quite an adventure trying to find things I like about the different varieties but I tried and actually discovered not all wines suck. Hunh. Then the coolest thing happened a huge blimp went right behind the guy who was talking, OK yes it was outside flying by and went behind him but it was still cool. I had to snap a picture of it because I had never seen one before. After the wine tasting we still had 2 more hours of tasting. We pretty much hung out, sipped drinks, snacked and visited until the place was closing down. I gathered up a few more samples. When the vendors found out I was going to a hostel for a few days with my family they literally loaded me down. I had several bags of “My Husband's Nuts”, a huge bag of Mezzetta goodies olives, pesto and sweet peppers plus artichoke sauce. Then Frog Hollow Farm got in on the act and gave me more granola, dried peaches, honey and apricot preserves. I took all my goodies to the hostel and we ate very well, a few made it home with me too! I left with 4 bags of swaggy goodies and a box of 4 wine goblets which were being handed out at the door. Thankfully my awesome hotel was a block away and Janet and I made it safely without losing or dropping anything. We rested again for a short bit and then it was on to the Outstanding in the Field Dinner.

The dinner was held at a local produce warehouse, Greenleaf Warehouse. After a swaying bus ride in which certain foods and drinks started to feel disagreeable in my stomach the cool refreshing warehouse was welcome relief. I passed on more wine by Bonny Doon Winery but from everyone I heard it was excellent wine. Dinner was served at a long winding table set for 250 people, it snaked through the warehouse and looked so amazing. Each course was paired with more wine but I though my best bet was to simply drink water and try each course as they were served.

We started with a platter of pickles and kimchee and a huge basket of crunchy shrimp chips. The next course was a fantastic soup made by pouring hot broth over fresh mushrooms, simple and delicious. After that was an udon dish with a spicy dressing and whole grilled calamari(whoa!) Tracy of shutterbean claimed to be a fan so I handed over a pretty big calamari to her, she said it was a bit hard to eat because it was so big. The next dish seemed to cause a lot of confusion because the menu said sea trout but the server said it was salmon and having eaten a fair amount of salmon I would have to say I don't know what the hell it was. It was huge fillets and it was orange, not typical of any trout I have caught or eaten but sea trout is a different beast. Mushroom risotto was up next, it was good but it didn't stand out to me. The last 2 dishes were the standouts for me, beef cheeks and oxtails with potatoes and carrots and roasted brussel sprouts tossed in ponzu and topped with bonito flakes. I love brussel sprouts and these were top notch, possibly the best I have ever eaten. Dessert was meh, rice pudding with fruit and cookie crumbs. I don't know, it seemed like a let down but so many people were raving I guess I learned that I am just not a fan of rice pudding. I was feeling better about this time, just in time for the FoodBuzz awards. I don't know who won what really except that a new friend Joy the Baker won for best baking blog and another new friend John won for best video blog. Way to go! The prizes were great I heard, Le Creuset and other goodies. We took another swaying bus ride back to the Hotel Vitale and then proceeded to have a few drinks quite sedately in the bar. Seriously. I will not say more. Shut up.

The next morning I woke up with my own hand print on my cheek. I slept so hard I guess. Thankfully I was up early enough for it to wear off before the final event at LuLu's, brunch with a bloody mary bar. I skipped any booze and headed straight for water and coffee. After several cups of each I felt like I could smile and maybe even eat, although I should have passed on the eating and drank more coffee. I visited with Linda- A Scoop at a Time, Erika-In Erika's Kitchen, Janet-Pretty Green Girl, Susan-Local Lemons and Lindsay-Life with Lindsay. In no time at all I was whisked away by my husband and boy-os to the museum and on to Pigeon Point Lighthouse. What a weekend, what a weekend.

It's Been 3 weeks

So for the last three weeks my life has been crazy. Here's a little recap:

1. 3 days before Halloween everyone (except me) got sick with a nasty stomach flu

2.which crushed our 2 littlest boys because we refused to help them spread the ick by taking them trick or treating

3.we attempted to make up for our evilness by having a Ultimate Star Wars-a-thon

4.this worked for one little boy but the other spiraled down into serious screaming and crying and grabbing his ear, we decided late in the day to hit the local instant care center only to have them all closed for the holiday

5.which left us one option, Emergency Room which is normally not an option for us but in light of the illness we were already dealing with we decided to go to the ER, 1500 dollars lighter we had a diagnosis, massive ear infection and a bonus-pink eye!! Have you ever held down a screaming crying 42 pound wildebeest and attempt to administer burning eye drops, twice a day? No? Well then you my friends are NOT living the good life

6.recovery, recovery, recovery hopefully in time to leave on our first ever plane trip with the little boys to sunny California

7.leave early exactly one week after the barfing began, only to have it continue, on the plane, on me and in a restaurant, not fun

8.that passed and we had a whirlwind 4 days in San Francisco where I attended the AWESOME FoodBuzz festival-side note I had so much fun meeting tons of awesome bloggers, drinking some kick ass beer (Magnolia, best beer ever, although others (Janet) thought Rogue Beer was cuter, er em better) I think I had a residual food and booze hangover for at least 2 days

9.but thankfully I got to spend those days at an AMAZING hostel on the coast, Pigeon Point Lighthouse, run by Hosteling International is a wonderful place to kickback and relax, we played on the beaches in and around Pescadero and Half Moon Bay

10.we traveled by Amtrak Coastliner from San Jose to Anaheim

11.where we met Blue Grandma for an 6 day stay at the Disneyland Hotel, wow who needs a theme park or 2 when you have so many other things going on? OK we do and we loved it, especially after we figured out mr. tough 4 year old was not so tough and needed the kiddie rides, cool with me-I did take the 6 year old on California Screamin' their big roller coaster, he screamed and cried the whole way, got off and said “that was the BEST ride”

12.we played, ate, rode rides, swam in the pool, smashed pennies, ate, watched parades, and rode 'it's a small world' too many times to count direct quote by the 4 year old “ that is good, good, good, good, good, good, great, good, good, good, great!”

13.we sadly left the good life behind, from +80˚ to -20˚, life is just not fair sometimes

As you can see we had a crazy busy 3 weeks and somehow Thanksgiving is right around the corner. How in the world did that happen?

I do want say I met so many awesome amazing bloggers at the FoodBuzz eat-a-thon, thanks for all the fun and the many many drinks consumed together. I am slowly digging my way out from under mt. laundry and the dirty house that accompanies a male house sitter. I will be by to visit your blog. I think somewhere some way I actually have some blurry photos of the festival and if any are appropriate I will be posting them along with as much of a round up as I can remember. The inappropriate ones are available for a small price. HA!

Winner Takes it All

I'm going to give you a hint about our wellness status: I'm still not cooking. And we leave in oh 31 hours or so for our first family trip. First time on an airplane for our little boys. San Francisco. Disneyland. Drive down the coast. Big excitement. And blarfy boys. I'm having fears of crying and airsick bags on airplanes. It's so bad I had a dream I was with my ex-husband (oh hell no) and was stuck outside a fake version of Disneyland. I'm thinking I am a little apprehensive about this trip. Plus then again I have all the fears I had for BlogHer Food, big ass (check), a zit(not yet!) or I am a total hick (I am) so to put it lightly I am a bundle of nerves and nervousness.

I think we are going to be OK. With such a great trip planned how can we not have a grand time, right? I am psyching myself out and I think I'll find that just like at BlogHer Food if I can just be myself and relax, all will be well. The rest is just hanging with my kids and my (real) husband and playing. I can do that. I do it everyday. So. Breathe deep. Here we go.

And if any of you weirdo stalkers think now is a good time to bust in because we're not at home, know this, we have:
  • a house sitter
  • A mean ass kickin' rooster
  • A hormonal teenager who "can't miss school!!!"
  • A silent but deadly yellow lab
And if none of those deter you and you still need to steal our stuff help your self to all of our used appliances especially the 1978 electric range and the 1984 refrigerator. I mean really help yourself. (OK don't that was a joke)

Sick or Treat!

We had quite a weekend, that ended a week in which I spent more time than anyone should sewing a mummy costume for Sirprize. A weekend that included 3 people having a thorough bout with a nasty stomach flu which caused none of us to enjoy Halloween trick or treating or any other festivities. Along with that fun, we also had one boy who developed a nasty intense earache that was so bad it necessitated a trip to the local urgent care center. Except that it was closed for Halloween. The only other option was the emergency room. Yeah that sucked. Turns out he had a very nasty ear infection, his second ever, and pinkeye! Can you say pariahs?

Needless to say we are so very thankful this weekend is over. I think the hardest part was telling my kids there would be no trick or treating. Period. Then my husband had a fantastic idea, sick or treating. We called up the grandparents and asked if we could come by after the sickness' were over. You know so the kids would actually get to wear there costumes and get a few pieces of candy. Of course the grandparents were happy to accommodate so soon, someday soon, we will be sick or treating. Not the perfect solution as far as the kids were concerned, they were advocating for "RIGHT NOW" but it will do.

I haven't cooked a meal since Wednesday. Having these sickos around has made cooking unnecessary. I might cook this week. We'll see how it all pans out. If anybody else falls victim to the ick I doubt I'll be cooking much. I hope I cook.
