Yum Hey What's for Dinner Mom?: Just Another Meatless Monday #1

Just Another Meatless Monday #1

Hey What's For Dinner Mom?

Hi and welcome to "Just Another Meatless Monday"! If you are part of the sweeping wave of humans trying to go meatless on Monday, or anything other day of the week, this is the place to be. Personally I love the idea of eating less meat. Why? Because it's cheaper, healthier and for the most part I'd rather grow, harvest and eat organic vegetables than meat. I do both.
Chances are most of us grew up eating meat for at least one meal every day, which makes it harder to think of a meal as complete without meat. This is the place to inspire others and glean inspiration if you need it.
Now if you were raised vegetarian don't go away yet, we NEED you and your vast knowledge of meat free eating. What makes a meal complete? What's your go to quick dinner fix? How do you pack lunch without meat? Are beans the only thing out there? And there are so many more questions out there I'm sure!

Here's my recipe to share:

Crock Pot Vegetarian Mexican Lasagna

1 18 ounce can of red enchilada sauce
1 15 ounce can diced tomatoes
1/2 cup bulgur wheat- dried par boiled cracked wheat
1 15 ounce can black beans-pinto or kidney are good too
1 cup water
1 teaspoon Mexican oregano
1 teaspoon cumin-optional

1 9 ounce box Barilla No Cook Flat Lasagna Noodles
2 1/2 cups shredded sharp cheddar cheese-more if you like it cheesy
16 ounce container low fat cottage cheese

over medium high heat bring the enchilada sauce, tomatoes, bulgur, beans, water and spices
simmer for 10 minutes or so

layer in the crock pot 1/4 of the sauce, 1/5 of the cheese, 1/4 of the noodles-break in half to fit and 1/4 of the cottage cheese
end with a cheese layer

Now you may only get 3 layers in your crock pot in that case just make your layers thicker
as long as the layers are pretty evenly distributed all will be good
cook on high 3 hours and then switch to low for 4 hours
or cook on low 10-12 hours
Crock pot size is important this was developed in a 6 quart oval crock pot if you have a smaller one cut the recipe in half or if you have a tall round crock pot you may need to make more layers. Some new crock pots cook at lower temperature because the manufacturers have lowered the overall temperatures to accommodate customer complaints. Watch your crock pot and adjust accordingly.

When I take requests for dinner my kids always ask for that lasagne thing in the crock pot and I know exactly what recipe they mean too. I often make this with meat too but find it's just as good with out it.

So what do you have to share today? You can link up ANY vegetarian meal, dish or snack post from your blog. Remember breakfast, lunch, diner and snacks count! Please leave a comment after you link up. Once you link in a recipe you can't link that same recipe for a month, but after a month you can feel free to link it in again. Who knows you might just inspire someone with it!

One lucky linker is going to win a hand needle felted pin. Made by me even! I have been enjoying learning how to needle felt and wet felt. I designed two pins, Peace and Love or World Peace, winners choice! And I will so have a picture up soon but a while back someone who shall remain nameless JACK crushed my card reader and never replaced it, guess when it decided to break for good? A yup tonight. Soon I promise. And In other random thoughts, why don't MACS come with built in card readers?

So what are you waiting for? Link up, grab my button, get inspired and who knows you might just win an original Queen of All pin!

Peace and Love,

  1. I seriously doubt if we will EVER had a meatless Monday (or any day) here at our house. Hubby is a MEAT eater...three times a day...every day. I could go without eating meat 75% of the time. I left a link for Cuban Rice Stuffed Mushrooms...its a good recipe.

  2. My husband would love this. I would add meat to it. I'm a vicious carnivore like that. :)

  3. I go without meat often without thinking about it... and mainly because I'm lazy when I'm just preparing food for me (which is most of the time).

So I left you some cheesey, potatoey love in the link above. :)

  4. Laura, I just linked up my Ranch Mac I made the other day. It was a hit in our house!

I'd say right now were about one meal a week without meat...hubby would probably DIE if I went any more than that...but I'll keep trying!

  5. Love, love that you've used bulgar in this. What a great recipe, Laura!

I'm linking up my fake fettuccine recipe this week ... because we had it for dinner again on Friday. Its my low-fat take on fettuccine alfredo and we love it. :)

  6. We're the same as you - about 2 or 3 meals a week meatless. Sometimes a lot more, sometimes less. Usually it depends on if I remembered the thaw some meat. I've had to get creative b/c I'm horrible at remembering to take stuff out of the freezer!

  7. Oh man, I could go meatless forever. It's just not that appetizing to me. Sure I'll eat it when it's served to me but I'd rather eat cold cereal instead.

Or this vegetable lasagna of course.

  8. Hmmm... I like this idea, as I frequently cook sans meat. Actually my Tasty Tuesday this week will be meatless - except for the chicken broth which can be substituted with veggie broth or water. Yum!

And so appropriate for a meatless day? My word is "harmwess"

  9. Coleen-thanks for the great link! I love stuffed mushroom.

Hey blonde duck! My family likes it either way :)

Dallas celiac those potatoes look delicious

Ally!! I love the idea of ranch mac and cheese

Diva! fake bowl o' sin? it's right up my alley!
Christina-the egg burritos are a great ideas AND you didn't order out :)

Pooba I would have guessed you would rather have cereal, junky cereal or wood twigs?

Michelle, I think the link up will be open tomorrow too, I can't remember which day I picked the link in to end!

  10. How yummy..

    That turkey is happy..

  11. Dude don't worry about the link thing, I totally understand. Even w/ J touching stuff on the blog I make sure he backs it up first. I'm super paranoid about messing it up too! :P

hehehe I sent over Simply Life! I feel so awesome now!

Oh PS question about Meatless Monday. Does this mean meatless - no beef, chicken, pork? or is fish ok like Lenten dishes?? Totally ok either way, just wanted to make sure b4 I go in archives!

  12. This looks great! I just bookmarked it for a future meal. Thanks!

  13. Thanks for linking this one up too. It is yummy for sure.

  14. I could easily do without meat, a tasty nice recipe, thank you

  15. I shared `Mexican Cornbread` for Round Robin. Maybe the two can go together. Thanks for sharing!

Am I talking DIRECTLY to you? Well then let me know!
