
Hello! I hope this finds you and yours healthy and happy after celebrating the Independence of America. We had a quiet hike in the mountains this afternoon, no barbecues or exploding things this year. Used to be we tried to have HUGE picnics on the fourth but you can only throw so many parties where you have to beg guests to come, remind them several times and they still don't show before you decide against it. And hike instead. Yes HIKE on my ankle which doesn't hurt, wooohhoooo. The first hike this year and hopefully not the last.
This last week I cooked a big pot of garbanzo beans for hummus and general use. I like to do that, it makes enjoying dried beans so easy. I tried a new garbanzo bean stew, copying (sort of) Jill's peanut curry I tasted the week before. It didn't taste one bit like Jill's peanut curry but it was SO good. Serious happy curry tummy on this one. And it features one of my FAVORITE greens, mustard!
Garbanzo Bean Peanut Curry
2 TBSP oil
1 TBSP minced garlic
1 tsp curry powder-more or less depending on your tastes
3 cups vegetable broth
2 TBSP tomato paste
2 TBSP soy sauce
3 cups cooked garbanzo beans
3 cups cooked rice-brown or white
2 TBSP peanut butter
1 market bunch of mustard greens, chopped to bite size pieces
chopped peanuts for garnish
in a small dutch oven or large sauce pan heat oil over medium high heat
add the garlic and curry powder and cook until fragrant about 30 seconds to one minute
add the broth and bring to a boil
whisk in the tomato paste and soy sauce
stir in the beans and return to a boil
then reduce heat and simmer five minutes
add the rice simmer 10 more minutes
add the peanut butter and stir until incorporated
then add the mustard greens
simmer 2-3 more minutes until the greens have wilted
serving piping hot with a sprinkle of peanuts
