
Two recipes came together this week to make a delicious and filling lunch and dinner. Last week Girlichef linked up Lentils and Potatoes with Curry to Just Another Meatless Monday and it looked good. Another friend (in real life too!) Steph over at Up North Over Yonder and Out of My Mind made a vegan Dal dish so good she swore her kids shoveled it in. I don't care for lentils really and I don't know why, perhaps it's the unattractive brown color, I don't know. I kinda mashed the two recipes together and I may have to amend my thinking, these lentils were amazing. And my kids ate them by the bowl full.
Potato Dal
1/2 onion, chopped
1/2 cup coconut oil
1teaspoon salt
1 teaspoon cumin
dash of crushed red peppers-optional
2 teaspoons of curry powder-more or less to suit you
1 cup red lentils, washed
2 large potatoes
water
in a large sauce pan heat the oil over medium heat
add the onion and let it cook for about 5 minutes
add the spices and quickly toast
add the lentils stir them around a couple times
cover with water to about 1 inch above the lentils
put a lid on the pot and bring to a boil increasing heat if necessary
chop the potato in to bite sized pieces
add to the boiling water cover and reduce heat until it is just simmering
cook for about another 20 minutes or until the lentils are soft
check on your lentils, you may need to add more water as needed to keep it from cooking dry
I added about 4 more cups throughout cooking
These lentils are delicious, plain and simple, a great easy meal. I ate them without rice for lunch and didn't need a mid afternoon snack. I served the leftovers on brown rice with fresh stir fried broccoli and sugar snap peas. I have red lentils on my list for my next order from Azure Standard and can't wait to make them again.

Maybe we can make it together some time?? For my part, I love lentils AND potatoes so I will definitly try this one! :) Jamey
ReplyDeleteI think I might leave out the "vegetarian ground beef crumbles" though because that sounds positively disgusting!
ReplyDeleteI've always been a bit nervous about cooking lentils too - their appearance kind of throws me. But if I have them in something someone else has cooked I really like them so I think I'm going to have to stop being nervous about it!
