Savory Bacon Bread Pudding

I love the concept of bread pudding but struggle with the semi sweet flavors of many that I've tried. So when trying to come up with a recipe using Nature's Pride bread I decided to make a bread pudding I would like. I ruled out a sweet version because I'm always disappointed in them and went savory. Bacon, egg, feta and nutty oat bread nestled with herbs in a muffin tin made a superior bread pudding, in my opinion anyway. These are perfect made ahead for busy mornings, as a brunch dish or as breakfast for dinner.

Savory Bacon Bread Pudding--oven 350˚
1 cup milk
4 eggs
6 slices of Nature's Pride Nutty Oat Bread
1 teaspoon dry oregano
1 teaspoon dry thyme
6 fresh basil leaves-torn
6 strips of crispy bacon-I keep extra cooked bacon frozen for quick meal ideas
1/2 cup crumbled feta
course ground black pepper

generously grease muffin tin
pour the milk in a large mixing bowl
add the eggs and beat well
tear the bread into bite size pieces
add to the milk and eggs
let rest 5 minutes
meanwhile crumble the bacon
add the herbs and mix gently with a wooden spoon
add the bacon and feta
stir gently to combine
divide evenly into the muffin tin
sprinkle lightly with black pepper
bake 20-25 minutes until done
serve hot, warm or cold
these also reheat well for breakfast on the go

Well these certainly were a different and delicious bread pudding and I really like it! I guess now I should tackle a sweet bread pudding next, hunh? Maybe a caramel apple bread pudding, I bet that would be sweet enough.
