Winter Salsa-Canned Tomato Salsa
1 clove fresh garlic, peeled**
1/4 medium onion, sweet work well for good flavor**
handful of cilantro, washed **
hot pepper, if desired
lemon or lime juice**
28 ounce can Diced Tomatoes-the best you can afford
1 16 ounce can of hominy, drained and rinsed
salt, as needed**
in the bowl of a food processor fitted with a chopping blade whirl together the onion and the garlic
add pepper if using and chop well
then add the cilantro chopping well
add a squirt of lemon juice
then add the tomatoes pulsing lightly to combine and chop slightly
taste and add salt if needed
pour into a bowl
add hominy and stir to combine
refrigerate until ready to use
will last up to 3 days in the refrigerator
** I want to stress this is a basic recipe and you should make it and taste it along the way to see what suits you. I like a lot of cilantro but you may not, make it yours by adding what amounts you like. And of course if you have your own canned tomatoes then you could definitely make this with them.
So did you have leprechaun troubles today? We did but he was sneaky, he only tried to steal some money. He raised a little heck and then ran off. We did however get a foot of fresh snow.
And learned we can carry three stools at once. Because we are talented.

It seems that I always find fun recipes like yours when I'm snowed in and out of stuff like cilantro. Because of that, I bought some dried cilantro flakes (spice isle) but I've never used them, have you? Are they a waste?
ReplyDeleteWhile they do NOT taste the best they will work, I also freeze the fresh cilantro and use it straight from the freezer. It's black but the flavor is good. I wonder if you could use a pesto like recipe for a long term preservation idea? Just oil and cilantro?

ReplyDeleteLaura, have you ever thought about making your own hominy? We've done it a couple of times with my grandparents! Maybe it's in the Putting Food By book. :)
