Couple weeks ago at our Fall Faire bake sale I noticed some cookies, Caramel Apple Cookies, and I thought "hunh I should get some of these". Apparently everyone else had the same idea because when I went back to get some they were, surprise surprise, gone. And, of course, everyone was talking about how good they were. Double damn, I missed out on good cookies. The next week folks were still STILL talking about how good the cookies were. Seriously? And I didn't get any?
Only one way to remedy, google+experimentation=cookies. Yum. I love this kind of 'hard work'. I messed around with a couple recipes and tweaked them to fit what I had or didn't have. The recipes are all out there, for any size, shape, style, type of caramel apple cookies. I played with the caramel pieces a bit, melting some whole caramels right on top of the cookies and then trying some wrapped inside the cookies. I preferred them wrapped inside the cookie because the caramel stayed softer. But 2 others in my house liked a big pool of melted caramel on top of the cookie even if it was a bit harder to chew. One in my house preferred NOT to like them at all, perfectly fine with me, more for us.
Caramel Apple Cookies
1 cup of butter
1 cup brown sugar
1 cup white sugar
8 packets Hot Apple Cider powdered mix
1 tsp ground cinnamon
1 TBSP of vanilla
2 eggs
2 3/4 cup of flour, I used a fair amount of whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 bag of caramels, amount will vary depending on how many cookies you make, size of cookies, amount of caramel added
in a stand mixer cream the butter and sugars until light and fluffy
add the apple cider drink mix and the cinnamon and mix well
add the vanilla and the eggs, again mixing well
in a separate bowl mix the flour, salt and soda
stir into the sugar mixture until well combine
refrigerate at least an hour
preheat oven to 350˚
unwrap some caramels to get ahead, if you want you can cut the caramels in half or quarters-I tried halves and whole
form cookies about the size of a Tablespoon and either wrap a caramel chunk up inside of the dough or poke it down on top of it
bake on cookie sheet for 10-12 minutes
remove before they catch on fire
let rest 2-3 minutes on the cookie sheet before removing to a cooling rack
makes a varying amount depending again on what size cookies you make

ReplyDeleteI LOVE these cookies. I just tried making them for the first time and I'll admit that I was skeptical with the 8 packets of apple cider. But they are delicious! I used caramel bits, which are like baking chips, and just put them in the middle of each cookie. If I use those again next time I think I'd just put them in like I would chocolate chips. Great recipe!!
