Just Another Meatless Monday #78 Pierogi Pizza

Hey What's For Dinner


Hello! My new favorite way to use up leftover mashed potatoes, Pierogi Pizza. All the delicious flavors of pierogi in about 10 minutes worth of work. Who's with me?? I've never actually made pierogi because the recipes were all completely intimidating and time consuming. I do plan to make them in the future, a huge batch actually, so don't think I'm lazy or anything.

Pierogi Pizza
6 cups leftover mashed potatoes
1 large egg
butter to grease the baking pan
1 TBSP butter
1 TBSP oil
2 large onions
1 cup shredded sharp cheese--more if you like lots of cheese

preheat the oven to 425˚
mix the potatoes and the egg together
generously grease an 11x17 baking stone or cover a baking sheet with foil and generously grease that
spread the potatoes on the pan, pat out as flat and even as you can
bake in the preheated oven 20-25 minutes until the bottom is crispy brown and the top is well set, it will a lot like a regular pizza crust
meanwhile heat the butter and oil in a large skillet over medium heat
slice the onions in rings about a quarter inch thick
cook over medium heat until very soft and sweetened, stirring often to keep from burning or or getting to brown
when completely cooked, soft and sweet remove from heat and set aside
when the potato crust is done baking sprinkle it with the shredded cheese and then top with the onions
return to the oven and bake for 5 more minutes until the cheese is completely melted and the whole thing is melded together
remove from the oven, slice and serve


You can actually pick this up and eat it like pizza but we preferred to eat it with forks, it was just easier. Now here's my regular spiel: add more cheese or less cheese, a dollop of sour cream would be amazing on it, less onions would be fine and you don't need to cook them all completely either. I just can't eat raw or even under cooked onions so I make sure they are cooked completely for us.

  3. I had a recipe for pierogi pizza printed out for a good 6 months (or more) on my desk in IL and never got around to making it. Now it's either thrown out or in a box buried in storage. So sad. I still want to make it though!!

  4. I never heard of pierogis until I got to NEPA. I guess I just live a very sheltered life.

  5. I love this idea! I actually have made pierogies in huge batches and it is a LOT of work! And now I am gluten free so it would be even more of a task to convert a recipe to be gluten free so this is much more do-able, and it sounds delicious!
