Bacon Roasted Brussels Sprouts

We are a family that loves roasted vegetables, fights can commonly occur over the last of whatever roasted veggie is on the menu. Broccoli, Brussels Sprouts and cauliflower are top contenders for favorite, we'll even eat them cold (oh hey that's me but I'm part of the crew too). Anyhoodle you roast it we eat it, especially if you add bacon to the mix.

Bacon Roasted Brussels Sprouts
oven 400˚

1/4 pound of bacon
1 1/2 pounds Brussels Sprouts
salt and pepper

preheat the oven to 400˚
lay the slices of bacon in a baking sheet and bake for 10 minutes
while the bacon is cooking wash and clean the Brussels Sprouts
remove the outer layer of leaves if needed
cut each in half if they are small or in quarters if they are big
after 10 minutes remove the bacon from the oven and set it to cool on a plate, or rack to drain
pour off all but a Tablespoon of drippings from the pan
toss the sprouts in the drippings
carefully chop the bacon, careful it might be hot
toss the bacon in with the sprouts add a dash of salt and pepper and toss one more time
roast at 400 for about 30 minutes or until roasty and delicious

Peace and Love--

  1. This is my all time favorite way to eat brussel sprouts, although I add a little sweet onion and a tiny pinch of red pepper flakaes and do it all in a frying pan. Fantastic combo!!
