
I wanted to make pineapple vinegar so I bought a pineapple. I set about to make vinegar but realized I wanted to use as much of this rare (to us) tropical treat as I could. What ELSE could I do with a pineapple? I came up with eating it fresh, making salsa, growing the top and of course making the vinegar.
WHY would I want to make pineapple vinegar? Well because I want make Cortido, a Latin America Sauerkraut. I bought 40 pounds of organic cabbage from Azure with the idea of making a vat of Sauerkraut for summer hot dog season. I came across the recipe for Cortido and decided to give it a whirl.
Pineapple Salsa
1 cup finely chopped pineapple
1/2 a red pepper, finely chopped
1 Tablespoon minced cilantro
1/2 jalapeƱo, minced
mix all the ingredients
chill for at least an hour before serving
serve with corn chips, fajitas or tacos
Pineapple Vinegar
1 pineapple skin
1 pineapple core
1 Tablespoon of sugar, whatever kind you have on hand will work
2 quarts of fresh water
place skin and core in a large jar
cover with 2 quarts of water
cover the jar with muslin or cheese cloth
let set on the counter for 3 days
skim out the pineapple pieces
strain and store in dark cabinet for 2-4 weeks
Pineapple Plant
top of pineapple with 1/2-1 inch of meat
topsoil or sand
8 inch flat dish with drainage holes
rocks to cover drainage holes
cover the drainage holes with rocks
fill over with soil
water the soil
"plant" the pineapple top in the soil cover about half the meat
with soil
water regularly and it SHOULD start to grow
I've had one of theses grow and one die before
So there it is top to bottom use of a pineapple. Eaten and enjoyed, garnish, fermenting away and hopefully growing too.

I haven't heard of pineapple vinegar before, but I can think of so many things to use it in! It sounds wonderful. I really like your pineapple salsa too - so colourful, spicy and delicious. It's great you were able to plant the top of the pineapple as well - your plant looks lovely.
