Just Another Meatless Monday Egg-ceptional Egg Salad






Hey What's For Dinner



I love a good creamy egg salad, lots of mayonnaise dill pickle, mustard and soft white bread. Can I get a hell yeah?!? Somewhere along the line I ate a few too many egg salad sandwiches like that. Too good to stop apparently. I have found a way to enjoy egg salad again, no nasty fat free mayo or other disgusting fillers. Just good honest egg salad, lots of flavor and good for you.

Egg-ceptional Egg Salad
serves one 
1 hard boiled egg
1 TBSP good mustard, or more to taste
1/2 tart apple
3 stalks of celery
1 TBSP walnut pieces 
salt and pepper to taste

peel the egg and mash in a small bowl
mix in the mustard and set aside
chop the apple and 1 celery stalk finely 
mix in to the egg
mix in the walnuts 
taste and add more mustard if needed
add salt and pepper to taste 
serve with the remaining celery sticks 
or better yet stuff the remaining celery sticks with the egg salad

  3. This is great. I love the idea of adding apples and walnuts and making it more like a waldorf egg salad. I do this with chicken salad but hadnt thought to try it with egg. Great! Thanks!
