
Egg-ceptional Egg Salad
serves one
1 hard boiled egg
1 TBSP good mustard, or more to taste
1/2 tart apple
3 stalks of celery
1 TBSP walnut pieces
salt and pepper to taste
peel the egg and mash in a small bowl
mix in the mustard and set aside
chop the apple and 1 celery stalk finely
mix in to the egg
mix in the walnuts
taste and add more mustard if needed
add salt and pepper to taste
serve with the remaining celery sticks
or better yet stuff the remaining celery sticks with the egg salad

ReplyDeleteThis is great. I love the idea of adding apples and walnuts and making it more like a waldorf egg salad. I do this with chicken salad but hadnt thought to try it with egg. Great! Thanks!
