My kids really enjoyed these, it made meat loaf fun, meat loaf likes to be fun. Actually we all really liked them. And they're gluten free if you happen to be gluten free. Speaking of gluten free, I have had so much less joint pain the last week being gluten free that I may just go gluten free for life. I feel so good. If you suffer from joint pain why not give it whirl? What could it hurt? Of course i am not a doctor so you should really check with one before you go off half cocked BUT going gluten free is not particularly harmful either. Take my advice with a grain of salt, if it works for you go for it.
Mini Meatloaves
oven 350˚
1 pound of super lean 7% ground beef
2 TBSP gluten free oats--if you need or want gluten free otherwise use regular
1 egg
1 small onion, peeled and quartered
2 dill pickles
1/4 cup of pickle juice
6 TBSP ketchup
preheat your oven to 350˚
put your ground beef in a mixing bowl
whirl the oats in a blender or food processor fitted with a chopping blade
pour over the beef
whirl the egg, onion pickles and pickle juice until the onion and pickle are finely chopped
mix the egg mixture lightly into the beef
divide evenly between 12 muffin cup
bake at 350˚ for 30-35 minutes or until baked through
top each meat loaf with 1/2 TBSP of ketchup and bake for 2-3mintues more
serve hot
best eaten on a cold and dreary day

Unless it's a bread product or baked good (cake or whatever), I cook gluten free. I don't need fillers, and cornstarch for gravy gives a much nicer color and flavor!

ReplyDeleteLaura, I make muffin meatloaves too! It makes for lots of crunchy edges. Yum! I'm a lunch lady and I've been trying to get my district to serve meatloaf but they just won't do it. This is a great portion size for kids.
