Just Another Meatless Monday Slow Cooker Vegetarian Tortilla Soup

Hey What's For Dinner

I love dropping dinner into the slow cooker, or crock pot, in the morning and coming back to a yummy smelling house and dinner practically cooked for you later on. It works well if you're heading off to a full day in the office or, as we did today, wrangling a half dozen boys for a birthday party. No sweating dinner, no ordering food you can ill afford, dinner is ready when you are.

This soup starts with dry pinto beans in the slow cooker and a couple quarts of fresh water. Later when you return home will be the time to season it and add the salt. So kick back, enjoy your day and relax knowing dinner is on it's way.

Slow Cooker Vegetarian Tortilla Soup

4 cups dry pinto beans
3 quarts fresh water
1-2 TBSP salt
1 teaspoon chili powder
1 teaspoon ground cumin
2 cups salsa, fresh or from a jar
3-4 large flour tortillas
shredded cheddar cheese for sprinkling on top

wash and sort through the dry pintos
pour into the slow cooker
add the water
cook on high for 6-8 hours
in the last half hour before serving add the salt, chili powder and cumin, add the least amount of salt and then taste--add more as needed
pour in the salsa and cook for another 1/2 hour
tear the flour tortillas in to bite size pieces and add to the soup
stir and cook until warmed through
serve with shredded cheese to top it off
