Getting Ready

I roasted some sugar pie pumpkins today. 3 of them, cut them in half and had the 9 year old scoop out the seeds and such. We baked them for a little over an hour in a 350˚ oven. The kids went off to practice their Thanksgiving Magic Show with grandma for an hour or two. When they came back it was bedtime and they wanted snack. They chose....you guessed it baked pumpkin with a bit of butter and salt and pepper. How could I refuse?

If you want to make pumpkin pie without using canned pumpkin it's really easy. It simply requires scooping and baking the hollowed squash for about an hour. Then you puree the cooked squash flesh and you are set. Want to make it without evaporated milk? EASY! Just use cream instead and proceed as usual. I've been cranking out these pies for a few years now. No need to use the canned stuff when fresh is so much tastier and actually easy too.

The pie crusts are made and we'll make our pumpkin pies and chess pies tomorrow afternoon, a ritual of mine. I love baking in late afternoon this time of year especially for my much loved family. This year my mom (sniff) is leaving for Arizona for a few months right after Thanksgiving and I am already feeling weepy about it. But being diagnosed with Rheumatoid Arthritis last winter after suffering a massive inflammation attack made the decision for her to go so easy. She needs some fun in the sun or at least a good winter. I'm willing to let her go so she can have that, if I have to. We can skype right?

The bird is also ready and the house is clean(ish?) all I have left to do is wash the windows. I hate that job but I will do it before family comes because I'm much to embarrassed NOT to do it. The dog bed has been banished for washing and the dog is even brushed. On Thanksgiving we'll set the table with holiday dishes(Christmas really but they match!) and the silver. We'll decorate the table with squash and handmade beeswax candles(not ours but awesome!) and drink some good local beer.

Black Friday is a no. We're having some friends over for tamale making, crafting and a bonfire. Probably more beer too. I'm almost ready, almost done and yet TOTALLY not ready for my mom to leave.

  1. Just the 2 of us this year, but we are still doing the whole big turkey thing, so you KNOW what our menu will include the rest of the week, lol, Happy Thanksgiving to your family.

  2. Luckily I just have to bring a side dish to my families dinner...but I do plan on making pumpkin cinnamon rolls for breakfast tomorrow morning!

  3. The pies are on the list for today, Cody is excited to help me make them. Then, a quick clean of the house, and get prep work done for tomorrow. It will just be the 5 of us, but I still cook like it's 25, I do love a good party! Have a wonderful Thanksgiving Laura (and yes, Skype does help, I Skype w/mom and dad almost every day).
