Just Another Meatless Monday Apple Sauerkraut Gratin

The original recipe for Apple Sauerkraut Gratin came from Foy via last weeks Penny Worthy Project. I wanted to make it for Thanksgiving but it just didn't happen. With four whole days of hanging with the family I knew I'd get to it eventually and I finally did today. I made it for lunch and the whole house smelled so delicious we could hardly wait for it to be done. It did not disappoint, it was so so good.

 Of course I changed the recipe to fit what we had on hand, I used swiss instead of smoked cheddar, crackers for the crumbs and pecans instead of walnuts. I also cut it in half because we are so out of room in our fridge, no room for more leftovers. I don't think any of the changes I made hurt it one bit, I might buy smoked cheddar to make the original but we liked it so much like this that I don't even feel like I have to. Definitely a keeper. I love recipes that use our home grown homemade pickles as an ingredient. Sometimes we get tired of just having sauerkraut and it's a nice change to use it IN something.

Apple Sauerkraut Gratin

1 TBSP butter
1/2 an onion-chopped
3/4 pound of good homemade or store-bought sauerkraut-drained and if you like rinsed(I did not rinse)
1 TBSP good chunky mustard
3 cups apples
1 TBSP flour
pinch of nutmeg
pinch of allspice
1/4 pound grated swiss cheese
1/2 cup chopped pecans
3/4 cup cracker crumbs

lightly butter an 8x8 pan or something similar in size
preheat the oven to 375˚
in a skillet melt the butter over medium heat
sauté the onions in the butter until the onions are glossy
add mustard stir to combine and set aside
then mix the apples with the flour and the spices
layer the pan for baking like this apples, sauerkraut, cheese, repeat
top with the pecans and the crumbs
cover and bake for 30 minutes
uncover and bake an additional 15 minutes
serve warm
