Just Another Meatless Monday Curried Butternut and Basmati soup

Hey What's For Dinner


Yeah I'm back this week! I got my mac fixed and I am ready for this weeks Just Another Meatless Monday. Today was so so bitterly cold I knew I needed something nourishing to keep the family up and running for the day. I rummaged around and dug out a back of frozen peeled butternut squash and some brown basmati. With those as the starting block I came up with a Curried Butternut and Basmati Soup that was truly delicious and pretty hands off.


Curried Butternut and Basmati Soup

1 10 ounce bag of diced butternut squash
1 1/2 cups brown basmati rice
1 quart vegetable broth
1 TBSP tomato paste
1 quart water
1 teaspoon salt
2 teaspoons curry powder
pinch of cumin
yogurt for topping


place the squash and rice in a dutch oven
pour the broth and water over
bring to a boil
swirl in the tomato paste
add the spices
reduce heat, cover and simmer around half an hour, stirring occasionally
remove the lid and continue cooking for another 20 minutes or so until the rice is cooked through
taste for salt add more if needed
serve with a dollop of yogurt



This was a great bowl of soup, warm and warming plus it had the added bonus of happy curry tummy. Perfect for a cold winter-ish day. Our winter is not very white right now in fact it's rather dull brown and cold as all get out. The rest of the valley is getting terrible 80 mph wind but our area is just bone chillingly cold. I'll take it though, we don't want or need the wind, maybe just some snow??

  2. Thats what I keep hearing!! Palmer ALWAYS has wind--we got lucky! well that I'm sure just killed it, we'll have wind for a week now!
