5 days in to no gluten and no sugar. No one is dead, no one has been beaten(badly) and all seems well. Today was tough. Well hell to be honest everyday is tough, food is here, I am here and no one is watching. But I'd KNOW if I cheated and I finally really want to make sure to lose the weight I packed on with each baby, a broken ankle and giving up on losing weight. It has to go and so I have to follow a plan. And the plan has been cut out gluten, cut out sugar, eat reasonably and move more. Funny thing cutting out gluten feels an awful lot like the paleo diet.
You know the paleo diet--veg, fruit, meats, nuts, oils YEAH!-- dairy and grains NAY!. I've been trying to make a meal plan for the next two weeks and I've been researching recipes that are gluten free. Problem is many of the gluten free recipes I see are not healthy they rely on a large amount of other flours to make things filled with not gluten, like cinnamon rolls, oven donuts and gluten free bread. Umm that's not going to help this girl lose weight. So I have discovered that Gluten Free DOES NOT EQUAL HEALTHY it equals baked goods w/o gluten. Good. To. Know. If I were gluten free for life, skinny as a rail and needed to make brownies, well then I'd be set.
But I have also found out that many many paleo diet recipes are super healthy, veggie packed and full of lean meats. This week we'll be trying Inside Out Egg Rolls but with a bit less meat and a LOT more veg in them. This Asian Shrimp Mango and Avocado Slaw is on the menu, I'll either add more shrimp to it or serve it WITH a pork loin and reduce the shrimp a bit. So many recipes! I'll be using a few of our family favorites too because freaking out your kids with a radical "we're not eating grain" diet switch is NOT on my list of things to do. They still get oatmeal in the morning and everyone is fine with that. Not everything can change 100% all at once with kids.
So here we go:
Sausage Kale Soup--green salad with salsa dressing
Homemade Chicken Nuggets X2--oven roasted sweet potato home fries--fresh broccoli
Inside Out Egg rolls--sautéed mushrooms--fruit with honey(ours) and walnuts
Paleo Scotch Eggs(baked)X2--spinach salad--
Baked Salmon(caught ourselves)--Baked Sweet Potatoes--roasted brussels sprouts
Meatballs over sauteed spinach with marinara
Poached Eggs--Roasted Squash--Sausage Patties--
Asian Mango Coleslaw--Pork Loin?--spinach salad--
Stewed Chicken Soup(homegrown) w/ carrots, celery, spinach and like
Bacon Mushroom Burger Meatballs--tomato soup-carrots--pickles
Chicken Coconut Curry full of veggies served in a baked acorn squash
Baked Teriyaki Chicken ThighsX2--steamed broccoli-steamed bok choy
Riceless Sushi made with salmon, avocado, seaweed, cukes--this is fun because we LOVE to make sushi and everyone loves to eat it too
Lunches for myself and my husband will be leftovers of dinners--you're welcome honey!! Plus we have lots of eggs, smoked salmon, nuts, seeds, fruits and veg to choose from.
Lunches for boys will be smoked salmon, leftovers, seeds, nuts, boiled eggs, fruits, veg, seaweed packets(from costco--YUM!!), cheese, crackers, PB&J(ours), lunch meat roll ups, banana bread from christmas and apple sauce cups--ok not all of that everyday but an assortment of that
Snacks for boys has been popcorn popped on the stove, they love it, they can make it and I can eat one handful and be done. Yes it NOT paleo but it's contol-eo and way way less than I would have eaten on no diet. It's a start.
Peace and Love--
Hang in there. I'm gluten free. Sugar free is much harder. I tell myself everyday I'm going to cut out sugar. Here and I sit with my sugar and coffee. :) Good luck.
