Just Another Meatless Monday Cabbage and Zucchini

Hey What's For Dinner

Sounds weird and boring right? I know I thought the same thing too! But there is something magical working here, I swear. Every ingredient is plain plain jane and yet the end result is almost worthy of licking the pan clean, scraping anyway. I am definitely making this again, it's so easy, so paleo so vegetarian. I can easily see this topped with fried eggs for a complete delicious paleo meal OR not if you're of the vegan variety and a great side dish for you meat eaters out there. Either which way try it and wonder at the strange evolution of the simple ingredients.

Cabbage and Zucchini

2 TBSP coconut oil
1-1 1/2 pounds of cabbage-shredded
1/2 an onion, thinly sliced
1/2 cup water
1 garlic clove, minced
2 cups sliced zucchini
1-2 teaspoons of white wine vinegar
salt and pepper to taste

heat the coconut oil in a large frying pan over medium heat
when it's warm add the cabbage and toss to coat with oil
let cook 3-5 minutes then add the onion and toss to coat also
add the water and bring to a simmer
cover, reduce heat and let it simmer for 45 minutes-you don't want it to dry out and stick just cook gently
stir in the garlic and the sliced zucchini
cover and continue cooking for another 30-40 minutes
add 1 teaspoon of vinegar and some salt and pepper
cook and stir another 5 minutes the add more vinegar, salt and pepper if needed
serve with additional vinegar
