Make Ahead Crock Pot Barbecue Pork Stew--another easy freezer meal
Gosh does anyone call it a slow cooker? I am constantly calling my 'slow cooker' a crock pot, I guess it's what I grew up with. No matter what you call it, it brings to mind easy, no fuss meals made easy whether you make them ahead and freeze them or you pop ingredients in at nine am and waltz back in a 5 to dinner waiting for you. And cooking with a crock pot means you are saving money not only on electricity but you're NOT hitting the deli at 5:30 hungry, tired and just done with life for the day. Plus you look completely on top of things when everyone comes in and somehow you've pulled dinner off while running in 43 different directions. Well unless you forget to plug it in or turn it on, then all bets are off.
This Barbecue Pork Stew started off life this summer as a crock pot pulled pork recipe and I did not like it. I discovered my dislike for pulled pork after cooking one of the 3 bags I had made up, I think in general I just do not like pulled pork although I have tried. Valiantly. It wasn't the original recipe just me. So the next time I made it added more spices, did not shred the meat and added 2 pounds of cubed sweet potatoes a few hours before serving. The recipe was definitely getting closer to to delicious. I've made this up several times now and I think I like it this way. Please remember to take it and make it yours, don't like smoke flavor don't use it, want more heat add crushed red peppers or even sriracha, this recipe is the jumping off point for your personal style.
place frozen meal in a cold crock pot and cook on high for 6 hours
Do Not Stir
After 6 hours use a fork and gently break the pork into bite sized pieces
taste and add more salt if needed you may want or need extra smoke flavor too
then cube the sweet potatoes and drop on top of the meat
cover and cook for another 1 1/2 hours
to serve gently scoop out potatoes and pork and top with sauce
serve with bread for sopping up
You could add regular potatoes if your family has a distinct dislike for sweets, but the barbecue flavor really works well with the sweet potatoes here. And if all the ingredients to make the sauce intimidate you you could in a pinch use barbecue sauce in it's place. I hope you enjoy this new make ahead no cook freezer meal, we do.
